Pot Roast Dinner For Family?

I would like to make my parents a pot roast dinner for Christmas eve.
I all ready have my pot roast recipe, i would like some suggestions on a menu for the night.
I need an appetizer, a soup, a salad, and a dessert.
Please help me before Christmas Eve.

P.S.: The main course is Pot Roast

For your appetiser, why not make up a platter of anitpasto and let everybody help themselves. don't forget to have a bowl or basket of some lovely crusty break and a variety of good quality crackers as an accompaniment.

I usually put a selection of very good quality small goods on the platter, like a variety of salamis, ham, mortadella etc, some pate, good olives, a couple of good cheeses, some marinated mushrooms (which you can buy already prepared), marinated artichokes, smoked salmon etc pretty up the platter with garnishes of fresh strawberries etc

for the soup, this is a really easy, cheap but very good soup that can easily be made in advance- you might think it is a strange combination, but it is really good and the orange juice takes any bitterness away from the carrots and freshens it up.

CARROT AND ORANGE SOUP

4 tbsp. sweet butter
2 c. chopped yellow onions
12 carrots, peeled, chopped
4 c. chicken stock
1 c. fresh orange juice
Salt and pepper to taste
Grated fresh orange zest

Melt butter in pot, add onions, cover and cook over low heat until tender and lightly colored, about 25 minutes. Add carrots and stock and bring a boil. Reduce heat, cover and simmer until carrots are very tender, about 30 minutes.

Pour soup through strainer. Transfer solids to food processor. Add 1 cup of the cooking stock and process until smooth. Return puree to pot. Add orange juice and additional stock to desired consistency.

I would also serve it with a dollop of sour cream in each bowl and a garnish of snipped chives.

a good SALAD is a Greek style salad:

cut into large dice, cucumbers, red and green capsicums (bell peppers), feta cheese, good quality tomatoes, finely slice spanish (red) onion and add large good quality olives such as Kalamata. Sprinkle with dried oregano, freshly ground pepper and dress with red wine vinegar and extra virgin olive oil.
this salad is colourful and tasty.

DESSERT

This is a great easy to make, never go wrong recipe which seems to be universally adored.

Chocolate Mousse - Nigella Lawson serves 4-6
INGREDIENTS

150g mini marshmallows
50g soft butter
250g good dark chocolate (minimum 70% cocoa solids), chopped into small pieces
60ml hot water from a recently boiled kettle
1 x 284ml tub double cream
1 teaspoon vanilla extract

METHOD


1.Put the marshmallows, butter, chocolate and water in a heavy-based saucepan.
2.Put the saucepan on the hob, over heat, though keep it fairly gentle, to melt the contents, stirring every now and again. Remove from the heat.
3.Meanwhile, whip the cream with the vanilla extract until thick, and then fold into the cooling chocolate mixture until you have a smooth, cohesive mixture.
4.Pour or scrape into 4 glasses or ramekins, about 175ml each in capacity, or 6 smaller (125ml) ones, and chill until you want to eat. The sooner the better!

Q. Irish Bingo

A young girl from Donegal leaves home to find work in the bright lights
of London.

She comes home 6 months later and steps out of a taxi wearing a
full-length mink coat.
"Begorrah, Colleen," says her mother. "Tis a lovely soft coat yer
wearin' an' it looks so expensive. Where did ye get that?"

Colleen replies, "Sure now, I won it at the bingo. Don't they have
wonderful prizes in London?"

When the weekend's over, Colleen returns to the bright lights, but she's
back to visit her mom a few months later. This time, when she steps out
of the taxi, she's wearing a beautiful gold wristwatch and a large
diamond ring.

Same exchange with Mom...same "Won it at bingo!"

Colleen returns to the bright lights again. A few months later, she's
back. This time she's sporting a beautiful emerald and diamond necklace
with matching bracelet and earrings.
She hands her mother 1,000 pounds and explains that she won it all in
bingo. Then she asks Mom to run her a bath as she needs to freshen up.
When Colleen gets to the washroom, there's only a quarter inch of hot
water in the bathtub. Colleen, a wee bit peeved at her Mom being so
cheap with the hot water after being handed 1,000 pounds, calls
downstairs,"Mom! sure now, didn't I ask you to run me a bath? There's
only a quarter inch of water in the tub!"

"Indade there is, me darlin," replies her Mom. "But we don't want ta be
gettin' yer bingo card wet now, do we?"

You can never fool Mom.
well, you see she's sittin' on her "bingo card"...maybe this isn't that great....

BINGO!!!!!...hahaha!! ...you can fool some of the people all of the time, & all of the people some of the time,......BUT YOU CAN'T FOOL MOM!!!!!

My mom would always tell me that!!!haha!
