Answer
In Ontario (Canada) you have a fair number to choose from.
While a nice, luxurious resort might be found anywhere, you probably can't go wrong searching in the Muskoka region (the circle in the map at the following link): http://www.resortsandlodges.com/resort-type/luxury-resorts/canada/ontario/index.html
Sorry I can't really recommend a resort myself. I have a cottage, thus we don't really stay at resorts IN Ontario. Personally, I've been to Horseshoe Valley Resort. It was okay, but that was easily 20 years ago, and it may have improved since then. They have/had golf, hiking, mountain biking, riding, and more available to guests. I believe there's a spa, as well. http://www.horseshoeresort.com/golfnw/ (They're still in ski mode. But that will change soon enough.)
I've also stayed at '100 Acre Woods': http://www.bettergetaway.com/ It's by no means a "resort". Rather, it is a completely private guest house on 100 wooded acres near Ottawa. The owners' house is just behind it, but they leave you in peace. One of the owners is a chef, and you can order meals prepared by them, or bring your own food and cook in the guest house kitchen. (All the utensils are provided.) Not much to do but relax, though. It's out in the country, and there are ample walking trails through the woods. There's a telescope, binoculars for bird watching, an outdoor hot tub and hammock, etc. It's more for getting away from city life, than someplace with lots of activities at your disposal.
