I am running the wire direct to the breaker box with a cutoff spot (for emergencys) and the total distance is about 30 feet. It is 220.

Number 8 copper THHN is rated for 50+ amps. For safety a 6 will be better.

What is causing my hot tub to trip the breaker?

I replaced the breaker, its a 50 amp GFI, and checked all other connections. After 3 years it just started tripping the breaker.

OK you have a problem most likely with your heater. Bad chemistry takes them out over time. I will go out on a limb and say that you have not been making sure your "hardness level" has been correct. Be sure in the future to makes sure it's 250-400ppm.
Turn the power off. Disconnect each lead from the heating element. Put some electrical tape around each wire that was attached to the heater's post and then flip the power back on and see if it trips. If it doesn't you know it's your heater. Keep doing that with each amp plug making sure to turn the power off each time before you remove the various plugs.
Now to test your heater. Turn off the power. Now use your ohm meter and attach each probe to the heating element. Your range needs to be between 7.2-11.8. if it's outside of this it needs to be replaced.
